Rocoto relleno Rocotos or Capsicum pubescens Rocoto relleno is the Peruvian variety of stuffed peppers, a dish popular in the city of Arequipa, a city in the Andes mountains located in the southern parts of Peru which is famous for its take on dishes derived originally from Spain. Jagdwurst from Tyrol Jagdwurst (which means hunting sausage) is a German cooked sausage made of lean beef and pork, as well as belly of pork, salt, pepper, garlic, mustard seed, capsicum, mace, cardamom and water, which makes the sausage juicy. Part of the meat is very finely minced, but another part retains its structure. Jagdwurst contains about 20 percent fat. In the regions of the former GDR (eastern Germany), a common dish is sliced Jagdwurst coated in breadcrumbs (normally mixed with egg) and fried, often in butter.
The Big Jim pepper is a New Mexico chile pepper cultivar of the species Capsicum annuum with a mild Scoville rating. This cultivar is extensively grown in New Mexico where it was developed and is popular in New Mexican cuisine. Big Jim peppers are both sweet and mild and are normally picked while still green. The fruits are large and thick walled, often exceeding over a foot in length, and they are almost exclusively used to produce roasted green chili in New Mexican cuisine.
Pepper golden mosaic virus is a plant pathogenic virus of the family Geminiviridae. It affects Capsicum annuum and all tomatoes. It was first discovered in Texas in 1987, and was called Texas Pepper Virus, and a two years later in Mexico after it destroyed up to 100% of plants in afflicted fields in the autumn of 1989, mainly in north-west Mexico.Brown, J. Solanoideae is a subfamily of the flowering plant family Solanaceae, and is sister to the subfamily Nicotianoideae. Within Solanaceae, Solanoideae contains some of the most economically important genera and species, such as the tomato (Solanum lycopersicon), potato (Solanum tuberosum), eggplant or aubergine (Solanum melongena), chili and bell peppers (Capsicum spp.), mandrakes (Mandragora spp.), and jimson weed (Datura stramonium). Traditional jars used for fermenting gochujang Gochujang's primary ingredients are red chili powder, glutinous rice powder, powdered fermented soybeans, and salt. Korean chili peppers, of the species Capsicum annuum, are spicy yet sweet making them ideal for gochujang production. Other recipes use glutinous rice (chapssal, ), normal short-grain rice (mepssal, ), or barley, and, less frequently, whole wheat kernels, jujubes, pumpkin, and sweet potato; these ingredients are used to make special variations. The name pepper was given by Europeans when Christopher Columbus brought the plant back to Europe. Jalapeño peppers The jalapeño is variously named huachinango, for the ripe red jalapeño, and chile gordo (meaning "fat chili pepper") also known as cuaresmeño. The name jalapeño is Spanish for "from Xalapa" (also spelled Jalapa), the capital city of Veracruz, Mexico, where the pepper was traditionally cultivated. The name Xalapa is itself of Nahuatl origin, formed from roots xālli "sand" and āpan "water place". Genetic analysis of Capsicum annuum places jalapeños as a distinct genetic clade with no close sisters that are not directly derived from jalapeños.
In 1999, the habanero was listed by Guinness World Records as the world's hottest chili, but it has since been displaced by other peppers. The Bhut jolokia (or ghost pepper) and Trinidad moruga scorpion have since been identified as native Capsicum chinense subspecies even hotter than the habanero. Breeders constantly crossbreed subspecies to attempt to create cultivars that will break the record on the Scoville scale. One example is the Carolina Reaper, a cross between a Bhut jolokia pepper with a particularly pungent red habanero.
The yusheng had fish served with daikon (white radish), carrots, red pepper (capsicum), turnips, red pickled ginger, sun-dried oranges, key lime leaves, coriander, chilli, jellyfish, chopped peanuts, toasted sesame seeds, Chinese shrimp crackers (or fried dried shrimp), five spice powder and other ingredients, laced with a sauce using plum sauce, rice vinegar, kumquat paste and sesame oil, for a total of 27 ingredients. The New Mexico green chile is a variety of the chile pepper, Capsicum annuum, and was developed as a recognizable strain in New Mexico by the late nineteenth century. It is available today in several distinct and selectively-cultivated strains called cultivars. The chile pepper is grown in the state's very high altitude (4,000–8,000 ft) and dry, hot climate. Much like grapes for wine, these growing conditions contribute, along with genetics, to giving New Mexico green chile its distinctive deep green color, texture, and flavor.

It is best known through its use in Tabasco sauce, followed by peppered vinegar. Like all C. frutescens cultivars, the tabasco plant has a typical bushy growth, which commercial cultivation makes stronger by trimming the plants. The tapered fruits, around 4 cm long, are initially pale yellowish-green and turn yellow and orange before ripening to bright red.
Jews expelled from Spain and Portugal created a chocolate and confectionery industry in Bayonne still well-known today, and part of a wider confectionery and pastry tradition across the Basque Country. Basques embraced the potato and the capsicum, used in hams, sausages and recipes, with pepper festivals around the area, notably Ezpeleta and Puente la Reina. Fried Padrón peppers Padrón peppers () or Herbón peppers are a variety of peppers (Capsicum annuum) from the municipality of Padrón in the province of A Coruña, Galicia, northwestern Spain. European Union law has protected the name Pimiento de Herbón under the protected designation of origin since 2009 (PDO). These are small peppers about 2 inches (5 cm) long, with a colour ranging from bright green to yellowish green, and occasionally red. Their peculiarity lies on the fact that, while their taste is usually mild, a minority (10-25%) are particularly hot.

Pickled cherry peppers A pimiento (), pimento, or cherry pepper is a variety of large, red, heart-shaped chili pepper (Capsicum annuum) that measures 3 to 4 in (7 to 10 cm) long and 2 to 3 in (5 to 7 cm) wide (medium, elongate). Pimientos are green when immature and turn red when they reach maturity. The flesh of the pimiento is sweet, succulent, and more aromatic than that of the red bell pepper. Some varieties of the pimiento type are hot, including the Floral Gem and Santa Fe Grande varieties.
Ceviche, a Peruvian dish that has grown rapidly in popularity. Siling haba ("long chili"), espada (means "sword" in Spanish), siling mahaba, siling pangsigang ("chili for sinigang"), siling Tagalog ("Tagalog chili"), and sometimes called green chili, finger chili or long pepper, is one of two kinds of chili common to the Philippines, the other being siling labuyo. Chamba Chukh is a recipe prepared from locally grown chillies a Capsicum cultivar in the Chamba Valley of the Northern Indian State of Himachal Pradesh. The recipe is a generations old traditional preparation made from sun-dried red chillies or fresh green chillies. Blended with citrus extract from a local fruit, the Chamba Chukh preparation is a cooked chilli sauce and Chili pepper paste. Made by women in their kitchens in different parts of the Chamba district, the preparation has been highly regarded in the local region and in adjoining areas.

Like many other cultivars of Capsicum annuum, the friggitello requires a warm climate with a lot of sunlight and is not tolerant of frost. The seeds take 10 to 14 days to germinate, after which the plant will reach maturity in 70 to 80 days. It appreciates slightly rich and well-drained soils, but overfertilized soil will result in fewer fruits. The plant has the potential to grow plenty of fruits, so it requires staking if it is to be prevented from falling over due to the weight of the fruits.

Pepper X is a cultivar of Capsicum chili pepper bred by Ed Currie, creator of the Carolina Reaper. Pepper X resulted from several cross breedings that produced an exceptionally high content of capsaicin in the locules of the pepper. The exceptional pungency of the chili was developed over 10 years of cultivation. First We Feast 19 September 2017 According to Currie, he started developing Pepper X as he found his favourite chili peppers too mild and wanted to have a pepper that had more heat whilst retaining the flavour.
Their food spectrum has been subject to considerable dispute in the past due to confusion with the European corn moth. For two weeks in February 2011, the Infinity Chili held the Guinness World Record title for the world's hottest chili with a Scoville scale rating of 1,067,286 Scoville Heat Units (SHU). On March 1, 2011, it was displaced by the Trinidad Scorpion Butch T pepper, which registered 1,463,700 SHU. The fish pepper is a pepper cultivar of the species Capsicum annuum. Originating in the Caribbean, it is believed that the fish pepper was brought to the U.S. in the 19th century, where it grew in popularity in the Mid- Atlantic (particularly in Baltimore and in Philadelphia). In these cities, the pepper became a popular ingredient among the Black community and was commonly used in many crab and oyster houses (hence the name "fish pepper"). In Ukrainian sausage is called "kovbasa" (ковбаса). It is a general term and is used to describe a variety of sausages including "domashnia" (homemade kovbasa), "pechinky" (liver kovbasa), "krovianka" (kovbasa filled with blood and buckwheat) and "vudzhena" (smoked kovbasa). Use of the plant pesticide endosulfan was banned by the Environmental Risk Management Authority (ERMA) in December 2008, effective from 16 January 2009, after a campaign by environmental groups and the Green Party. Testing as part of the Food Residues Surveillance Programme had detected endosulfan in foods such as lettuce, strawberries and capsicum, but under 0.1 mg/kg. Raw Padrón peppers Fried Padrón peppers The most famous produce of Padrón are its peppers (Galician pementos de Padrón), which are small green peppers from the Capsicum annuum family. They are served fried with olive oil and coarse salt. Most taste sweet and mild, though some are particularly hot and spicy, which gives its character to the dish and is perfectly captured in the popular "Os pementos de Padrón, uns pican e outros non" (Galician for "Padrón peppers, some are hot and some are not"). The level of heat varies according to the capsaicin of each pepper.

Hatch chile refers to varieties of species of the genus Capsicum which are grown in the Hatch Valley, an area stretching north and south along the Rio Grande from Arrey, New Mexico, in the north to Tonuco Mountain to the southeast of Hatch, New Mexico. The soil and growing conditions in the Hatch Valley create a unique terroir which contributes to the flavor of chile grown there. Most of the varieties of chile cultivated in the Hatch Valley have been developed at New Mexico State University over the last 130 years. Hatch chile can be purchased locally in many parts of the Southwest.

Ema datshi (Dzongkha: ཨེ་མ་དར་ཚིལ་; Wylie: e-ma dar-tshil) is among the most famous dishes in Bhutanese cuisine, recognized as a national dish of Bhutan. It is made from hot chili peppers and cheese; "ema" means "chili" and "datshi" means "cheese" in the Dzongkha language of Bhutan. Different varieties of chilies may be used: green chili, red chili, and/or white chili (green chili washed in hot water and sun-dried), which may be dried or fresh. The chilies are called "sha ema" which is a Capsicum annuum, and seems to be a form of pepper much like cayenne, poblano, ancho, or Anaheim.

The sweet pepper is called peperone (plural peperoni) in Italian. Like most peppers, the fruit is green or yellowish-green when young, and ripens to a red color. In 2015 greenhouse tomato crops in Jordan showed mild foliar symptoms during the season, with fruit then developing strong brown rugose symptoms. Total RNA was extracted from the plants and Reverse transcription polymerase chain reaction (RT-PCR) were negative for many common tomato viruses but indicated the presence of a new tobamovirus. After sequencing and characterisation, the name tomato brown fruit rugose virus (ToBRFV) was proposed. The name was approved by the International Committee on Taxonomy of Viruses later the same year. In 2019 it was confirmed that symptoms observed on Capsicum annuum crops in Jordan in 2015 and 2016 were caused by infection of ToBRFV and Tobacco mild green mosaic virus.

Although it was grown in every province, barbaré was especially extensive in Yejju, "which supplied much of Showa as well as other neighboring provinces". He singles out the upper Golima river valley as being almost entirely devoted to the cultivation of this plant, where thousands of acres were devoted to the plant and it was harvested year round.
