The supplier farms, over 40 of them, range in production between 350,000 and over 4 million litres of milk per year. The dairy employs about 200 to make an annual 6,700 tonnes of cheese in 60 varieties.

Long Clawson is a village and former civil parish, now in the parish of Clawson, Hose and Harby, in the Melton district, in the county of Leicestershire, England. Like many villages, Scalford has lost a number of industries and amenities over the years. Performing in 2005 Bondage formed a new version of Vice Squad in 1997, along with former members of The Bombshells, after being persuaded to perform the old material at the Holidays in the Sun festival. Penicillium roqueforti is a common saprotrophic fungus in the genus Penicillium. Widespread in nature, it can be isolated from soil, decaying organic matter, and plants. The major industrial use of this fungus is the production of blue cheeses, flavouring agents, antifungals, polysaccharides, proteases, and other enzymes. The fungus has been a constituent of Roquefort, Stilton, Danish blue, Cabrales, Gorgonzola, and other blue cheeses that humans are known to have eaten since around AD 50; blue cheese is mentioned in literature as far back as AD 79, when Pliny the Elder remarked upon its rich flavour.

In addition to the arable land, there was of meadows and of woodland at Stilton. Carlton village sign celebrates its link with rhubarb Twelve farmers who farm within the Rhubarb Triangle applied to have the name "Yorkshire forced rhubarb" added to the list of foods and drinks that have their names legally protected by the European Commission's Protected Food Name scheme. The application was successful and the farmers in the Rhubarb Triangle were awarded Protected Designation of Origin status (PDO) in February 2010. Food protected status accesses European funding to promote the product and legal backing against other products made outside the area using the name. Other protected names include Stilton cheese, Champagne and Parma Ham.

Roquefortine C is a mycotoxin that belongs to a class of naturally occurring 2,5-diketopiperazines produced by various fungi, particularly species from the genus Penicillium. It was first isolated from a strain of Penicillium roqueforti, a species commercially used as a source of proteolytic and lipolytic enzymes during maturation of the blue-veined cheeses, Roquefort, Danish Blue, Stilton and Gorgonzola. Roquefortine C is a cyclodipeptide mycotoxin derived from the diketopiperazine cyclo(Trp-dehydro-His) and is a relatively common fungal metabolite produced by a number of Penicillium species. It is also considered as one of the most important fungal contaminants of carbonated beverages, beer, wine, meats, cheese and bread.

The distinctive odour comes from the process with which the cheese is washed during its ripening; it is immersed in perry made from the local Stinking Bishop pear (from which the cheese gets its name) every four weeks while it matures. To increase the moisture content and to encourage bacterial activity, salt is not added until the cheese is removed from its mould. In 2017 Stinking Bishop launched a bid to "make Stinking Bishop to Easter what Stilton is to Christmas", including a full-scale social media campaign, in-store media for their UK-wide stockists and a competition to win a tour around Hunts Court Farm.

Traditional equipment at the Wensleydale Creamery Wensleydale with cranberriesIn his essay "In Defence of English Cooking", George Orwell rates Wensleydale as second only to Stilton among British cheese varieties. In the popular 1962 novel "Hornblower and the Hotspur" (set in 1803) the title character makes "an epoch-making discovery, that Wensleydale cheese and port were a pair of heavenly twins" (ch. 9). Wensleydale was one of the cheeses named by John Cleese in the Monty Python sketch "The Cheese Shop", which originally appeared in a 1972 episode of Monty Python's Flying Circus. In addition, the shop owner, played by Michael Palin, was named 'Henry Wensleydale', which caused some confusion between the two when the cheese was mentioned.

The cheese was first made in the 1970s at the Castle Stuart dairy in Inverness, Scotland by Andy Williamson, a cheesemaker who had trained in the making of Stilton cheese in Nottinghamshire. The cheese was first known as 'Inverness-shire Blue' or 'Blue Stuart', but was eventually marketed as 'Shropshire Blue', a name chosen to help increase its popularity, despite it having no link to the county of Shropshire. After the Castle Stuart dairy was closed down in 1980, the cheese was revived by Elliot Hulme and Harry Hanlin of Cheshire, but once again the manufacture soon ceased. The cheese is now made by the Long Clawson, Leicestershire and the Cropwell Bishop and Colston Bassett dairies in Nottinghamshire.

Together they launched a film series, The Unseen World, showcased at the Alhambra Theatre in London from 17 August 1903, which showed scenes of animal life, with particular emphasis on micro-cinematographic views. The shows were advertised as being shown by the 'Urban-Duncan Micro-Bioscope'. Mary Jackson succeeded her husband as proprietor in 1913 and established the famous two-course Market Dinners of Stilton cheese, beef and vegetables, and a pint of Nottingham ale, for one shilling. The Inn was purchased for £26,000 (equivalent to £ in ) by her youngest son Robert, who in 1928 converted the stable courtyard at the rear of the premises into the café-bar-style Snack Bar, which included a large cabinet radio gramophone and catered to the workers building the new Nottingham Council House nearby. Robert's widow Dorothy continued the business following his death in 1934 and was joined by their son David in 1953.

The Domesday Book uses a number of units of measure for areas of land that are now unfamiliar, such as hides and ploughlands. In different parts of the country, these were terms for the area of land that a team of eight oxen could plough in a single season and are equivalent to ; this was the amount of land that was considered to be sufficient to support a single family. By 1086, the hide had become a unit of tax assessment rather than an actual land area; a hide was the amount of land that could be assessed as £1 for tax purposes. The survey records that there were 6.37 ploughlands at Stilton in 1086 and that there was the capacity for a further 1.62 ploughlands.

Penicillium glaucum is a mold that is used in the making of some types of blue cheese, including Bleu de Gex, Rochebaron, and some varieties of Bleu d'Auvergne and Gorgonzola. (Other blue cheeses, including Bleu de Bresse, Bleu du Vercors-Sassenage, Brebiblu, Cambozola, Cashel Blue, Danish blue, Fourme d'Ambert, Fourme de Montbrison, Lanark Blue, Roquefort, Shropshire Blue, and Stilton use Penicillium roqueforti.) In 1874, Sir William Roberts, a physician from Manchester, noted that cultures of the mold did not display bacterial contamination. Louis Pasteur would build on this discovery, noting that Bacillus anthracis would not grow in the presence of the related mold Penicillium notatum. Its antibiotic powers were independently discovered and tested on animals by French physician Ernest Duchesne,Duchesne 1897, Antagonism between molds and bacteria.

In 2005, the European Union and the UK Department for Environment, Food and Rural Affairs tried to persuade the two companies to merge recipes and gain Protected Geographical Status, from which products such as Parma ham and Stilton cheese have benefited. It would mean their use of the Newmarket label would be protected to them for the sausage market, but it would also mean only one of the two recipes could exist. Faced with this problem, each party stands firmly by its own recipe, and neither wants to bow down nor merge recipes. In November 2012, the Newmarket sausage received PGI recognition, all recipes co- existing as the European Union permitted the distinction between the recipes (including that of Eric Tennant Butcher's) and incorporated all the different ingredients listed in the application.

Following up on rumors of an "escape nook to Asia," the Chums travel ‘into the sands of the Inner Asian desert’ in search of Shambhala aboard the ‘subdesertine frigate Saksaul’, whose crew, ‘The Viscosity Gang’, is led by Captain Toadflax. Navigation is handled by Stilton Gaspereaux, ‘a civilian passenger… who prove[s] to be a scholarly adventurer in the Inner Asian tradition’. Chick and Randolph become aware of a broader ‘plot’ afoot in the region—that of oil prospecting. Chick finds it ‘distressing’ that ‘once again [they] are being used to further someone’s hidden plans'; Randolph becomes ‘obsessed, recklessly so’, by the Saksaul's logbooks’ other (monetary rather than sublime) plot potential. Having returned the Chums to the Inconvenience, ‘H. M. S. F. Saksaul [comes] to grief’, attacked by an unknown force, ‘the copy of the Sfinciuno Itinerary which the Chums in their innocence had brought aboard [having] led the Saksaul into ambush and disaster’.

"Pigs in a Blanket" on a baking tray Devils on Horseback is a dish that consists normally of bacon wrapped prunes that originated from the United Kingdom. It is made by stuffing a dried prune with chutney, then wrapping it in bacon and grilling it. It is then placed on buttered toast, given a grating of cheese, and broiled before serving. Other versions of this dish steep the prunes in alcohol, such as Cognac and Armagnac prior to stuffing and grilling, or use dates or apricots as opposed to prunes. Thomasina Miers, co-founder of Mexican restaurant chain Wahaca, has her own version of Devils on a Horseback where the prunes are soaked in a mixture of Earl Grey tea, Chile de árbol, allspice, and brandy prior to being wrapped in bacon and cooked, and is described by the Metro as “The most modern, racy spin” on Devils on Horseback. Chef Martha Stewart’s version of this dish involves stuffing dates with Stilton cheese before wrapping them in bacon.
