Before modern factory butter making, cream was usually collected from several milkings and was therefore several days old and somewhat fermented by the time it was made into butter. Butter made from a fermented cream is known as cultured butter. During fermentation, the cream naturally sours as bacteria convert milk sugars into lactic acid. The fermentation process produces additional aroma compounds, including diacetyl, which makes for a fuller-flavored and more "buttery" tasting product.

Graskaas (a Dutch term that translates as "grass cheese") is the cheese made from the first milkings after cows are led to pasture, having spent the winter indoors. This milk is rich and produces a mild-flavored and creamy cheese; cheese manufacturer Beemster is one of a few companies producing these relatively rare cheeses. Cheese made from milk produced by cows indoors is called hooikaas, "hay cheese". Meikaas, "May cheese", is similar to graskaas, but is ripened even shorter.

Fairley returned to Australia in 1927 and rejoined the Walter and Eliza Hall Institute. He worked there for two years, collaborating with the new director, Charles Kellaway in studies of snake venoms and with Harold Dew on the development of diagnostic tests for echinococcosis. Fairley dedicated most of 1928 to the snake venom programme, co-ordinating an enormous body of epidemiological data—including a questionnaire to Australian clinicians—on the frequency and outcome of bites by Australian elapid snakes. This work involved numerous milkings to establish typical and maximal venom yields, innovative studies of snake dentition using wax moulds, and detailed dissections to describe each species' biting apparatus.

A bulk tank using an Ice Builder or Ice Bank immerses the bottom of the inner milk chamber in an open pool of water with copper tubes containing refrigerant suspended in the water. Between milkings, a small low- power cooling system slowly builds up a coating of ice around the copper tubes, and prevents icing of the pool over by continuously circulating the water in the pool. After the ice has achieved a thickness of 2-3 inches, the cooling system stops running. During milking, the milk entering the tank is primarily cooled by circulating the water in the pool around the walls of the inner milk chamber, and the melting of the ice.

The milking process is the collection of tasks specifically devoted to extracting milk from an animal (rather than the broader field of dairy animal husbandry). This process may be broken down into several sub-tasks: collecting animals before milking, routing animals into the parlour, inspection and cleaning of teats, attachment of milking equipment to teats, and often massaging the back of the udder to relieve any held back milk, extraction of milk, removal of milking equipment, routing of animals out of the parlour. Maintaining milk yield during the lactation period (approximately 300 days) requires consistent milking intervals, usually twice daily and with maximum time spacing between milkings. In fact all activities must be scheduled around the milking process on the dairy farm.

It makes no difference whether one milks 10 or 1000 cows, the milking time should not exceed a total of about three hours each day for any cow as they should be in stalls and laying down as long as possible to increase comfort which will in turn aid in milk production. A cow is physically milked for only about 10 minutes a day depending on her milk letdown time and the number of milkings per day. As herd sizes increased there was more need to have efficient milking machines, sheds, milk-storage facilities (vats), bulk-milk transport and shed cleaning capabilities and the means of getting cows from paddock to shed and back. As herd numbers increased so did the problems of animal health.

In the European Union, "milk" by law refers exclusively to "the normal mammary secretion obtained from one or more milkings without either addition thereto or extraction therefrom".. Only cow's milk is allowed to be named "milk" on packaging, and any other milks must state the name of the respective animal: for example, "goat milk" or "sheep milk". The naming of soy drink as soy milk became subject of a 2017 court case before the Court of Justice of the European Union after a German consumer protection group filed an unfair competition complaint about a company describing its soya and tofu products as 'milk' or 'cheese'. The Court of Justice ruled that such designations cannot be legally used for purely plant-based products and that additions indicating the plant origin of the products (soy milk) does not influence that prohibition.
